Introduction

Number of Servings: 8

Ingredients

    1 cup Oat Flour (or you can make your own by putting old fashioned rolled oats in blender until fine)

    1 cup cottage cheese (I used 4%)

    1 cup liquid egg whites

    1/2 tsp baking powder

    2 tsp ground flax meal

    1.5 tsp ground cinnamon

    1/2 tsp ground nutmeg

    4 packets Spenda (or sweetener to taste)

    1 tsp vanilla flavoring (vanilla nut flavor is good too.)

Tips

I like my waffles a little crispy, so I freeze leftovers and pop them in the toaster. Works great and quick.


Directions

Put all ingredients in blender and blend until smooth. Let stand for 5-10 minutes before putting in waffle iron. Pour onto hot waffle iron and cook until done.

I eat these with Walden Farms Pancake Syrup. Yummy.

Serving Size: Makes 8 waffles. 1 waffle per serving.
