Ingredients

    2 large carrots
    2 large green bell peppers
    3 cloves garlic
    4 boneless, skinless chicken breasts
    2 tsp. ground ginger
    1 tsp. salt
    1/2 tsp. pepper
    8 ounces orange juice concentrate, frozen
    2 Oranges

Tips

I prepped all the ingrediants the night before and put everything in the crockpot before going to work in the morning. It worked great.
Serve with your favorite rice!


Directions

Peel and slice carrots (about 1/2 inch thick). Cut the bell peppers into 1/2 inch chuncks. Finely mince the garlic cloves.
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice inro the crockpot. Cover and cook on LOW for 4 to 6 hours.
Peel and segment the oranges and serve with the meal.
