Introduction

When introducing different cuisines to my 3 and nearly 2 year olds I find that they don't like flavours that are too strong for a first try, I have to 'coach' them into it by starting off slowly and keeping ingredients recognisable. If trying this with your kids for the first time use less seasoning. If I was making this for all adults it would be different, more spicy, more exciting accompaniments -but this version my kids love and it is a pretty enjoyable, healthy mid week meal for adults too. Ingredients

    400g fee range chicken breasts chopped (or use half this plus a can of black beans)
    I onion finely diced ( red or brown is fine)
    8 cherry tomatoes quartered
    3-4 tsp taco seasoning
    1 courgette (zucchini) grated or finely chopped
    1tablespoon of tomato paste

    To serve:
    8 Flour Tortillas warmed

    Salad of shredded lettuce leaves (~a cup), grated cheese (~half a cup) and carrot (one grated)

    Lite sour cream

    Guacamole (not incl in nutritional info) - I make a quick one my kids like: fork-mashing 1 avocado, finely chopped coriander (cilantro), a smidgen of garlic and a good squeeze of fresh lemon or lime and salt and pepper

    Hot sauce ( for me!)

Tips

Finely chopped adobe peppers added to this are delicious


Directions

Fry off onion in little oil in a high-sided frying pan. After a minute or so add chicken and taco seasoning. Once this starts to brown add courgette, tomatoes and paste, reduce heat and simmer for around 8min.

Serving Size: makes enough for 8 burritos or more kids sized ones
