Ground turkey, 93% lean, 1.3lbs
Vidalia onion, 1/2 chopped
Garlic powder, .25 tsp
Ground cumin, .25 tbsp
3 Red Bell Peppers, halved
Kosher Salt , .25 tsp
Extra Virgin Olive Oil, 1 tbsp
1/4 Med. Green Bell Pepper, chopped
365 Organic Tomato Paste, 2 tbsp
Swanson Unsalted Cooking Stock: Chicken, 1 cup
Cheese, Borden Mexican shredded cheese, 0.75 cup
Tips
I rarely use the full 1/4 tsp of salt in this recipe, all the ingredients are chosen to be lower in sodium, and it still comes out quite tasty.
Directions
Preheat oven to 400 degrees, halve and seed 3 bell peppers, put in a baking dish
On medium heat. Use oil to sautee onion add salt, pepper to taste. Add ground turkey, cumin, and garlic powder. Brown meat. Add chopped green peppers, chicken stock and tomato paste. Stir.
If you like add cooked brown rice to mixture.
Scoop mixture into pepper halves, and put into oven for 15 minutes. Cover with shredded cheese, and bake until cheese is melted (about 5 minutes).
Serving Size: Makes 6 Stuffed Pepper halves
