Number of Servings: 4


    1 lb (16 oz) canned ham
    1 medium sweet potato
    1/2 can unsweetened pineapple chuncks, with juice
    Sprinkle of ground cloves
    2 tsp. McCormick grill mates cinnamon chipotle rub
    2 tsp. sweetened flaked coconut


1. Peel the sweet potato and chop into large (about 2 inch) pieces. Place on the bottom of the crock pot/ slow cooker and sprinkle with ground cloves.
2. Remove ham from can, make shallow diamond shaped cuts on the top, and rub all sides with 2 tsp. of cinnamon chipotle rub.
3. Place seasoned ham on top of the sweet potatoes.
4. Pour all of the juice and about half the pineapple from a large can of unsweetened pineapple over the ham/ sweet potatoes.
5. Set slow cooker/ crock pot to high for four hours, or low for 5-6 hours.
6. DON'T LIFT THE LID FOR AT LEAST FOUR HOURS- or it will add approximately 30 minues of cooking time each time that the lid is removed.
7. Remove ham and pineapple from the crockpot.
8. You may remove the sweet potatoes and mash with 2 tsp of sweetened flaked coconut, or sprinkle the coconut over the diced sweet potatoes and serve.

4 servings. Goes great with a simple salad or steamed green beans.
