    14 Vanilla Wafers (low fat)
    2 - 8 oz. pkg. Cream Cheese (low fat)
    1 cup sour cream (low fat)
    2 tbsp. cornstarch
    3/4 cup white sugar
    2 tbsp. butter
    1 tsp. vanilla extract

    2/3 cup sour cream (low fat)
    1/4 cup powdered sugar

    Fresh strawberries


Preheat oven to 350F. Place paper cups in muffin tin and put one vanilla wafer is each.
combine cheese, sour cream, cornstarch and sugar in bowl of mixer (or processor). Mix until sugar as dissolved. Add the butter and vanilla and blend until smooth. Carefully fill the paper cups about 1/8" from the top. Bake for approximately 35 - 45 minutes of until wood skewer inserted in the middle comes out clean.
They may be browned slightly. Remove from oven and cool for about 10 minutes Add about a tbsp. of topping on each and put back in oven for about 5 minutes Cool completely and add a half of fresh strawberry on each. Cool a few hours or overnight and serve. Makes approximately 14 small cheesecakes.
