Introduction

I love Lasagna but face it a lot of calories. Here's a healthy choice; no pasta (gluten free); no meat (low cholesterol); lots of veggie; low fat cheese; and easy to make!! Ingredients

    No meat sauce:
    1 cup Quorn, meatless-no soy grounds
    0.5 med. onion diced
    1 diced green bell pepper
    0.5 can of pasta sauce

    cheese layer;
    1 cup low fat cottage cheese
    1 cup mozzarella
    dash oregano

    No pasta noodle layer:
    2 small zucchini (appx 4oz ea) makes 2 layers (thinly sliced long ways)

    1 oz spinach

    Sprinkle on top:
    0.5 cup parmesan cheese (shredded)

Directions

PREHEAT OVEN 350

sauté onion & bell pepper; add meatless grounds (until thawed; add pasta sauce; simmer until evenly heated and thicken.

While meat sauce is simmering mix cottage cheese & mozzarella & seasoning (to taste) set aside

FIRST LAYER: Take 9 inch square pan and lightly coat with olive oil; take 1 zucchini and put slices down in pan like you would if using noodles.

SECOND LAYER: Put meat sauce on top; spread evenly.

THIRD LAYER: Spread spinach evenly.

FOURTH LAYER: Spread cheese mixture evenly.

LAST LAYER: Spread second zucchini evenly on top like noodles.

Sprinkle top with parmesan cheese.

Bake at 350 for 30-45 minutes covered; uncover bake @ 400 for 15 minutes. Let set (cool down before cutting). Cut pan into 4 pieces.
