Perfect for the beginning of strawberry season! Perfect for the beginning of strawberry season!
Number of Servings: 8


    1 Reduced Fat Graham Cracker Crust
    2 c. sliced Strawberries
    1 pkg. Sugar Free Lemon Jello
    1/4 c. boiling water
    6 oz. fat free lemon or vanilla yogurt
    2 c. Cool Whip Free
    1 t. Lemon zest
    Yellow food coloring (optional)


Place strawberries in the bottom of the graham cracker crust, reserving several slices for garnish. Place jello in a medium bowl, add boiling water and stir until completely dissolved (about 2 minutes). Stir in the yogurt, 1/2 t. of lemon zest and food coloring, if using. Fold in Cool Whip Free and pour over strawberries in pie shell. Garnish with reserved strawberry slices and remaining 1/2 t. lemon zest. Chill for several hours or overnight. Cut into 8 slices for serving.

May be frozen for a refreshing summer treat!!
