    3 medium zucchini
    3 garlic cloves
    1 lb. 93% lean ground beef
    7 oz. sliced mushrooms
    1 cup tomato sauce
    2 cups shredded cheddar cheese (sharp or moderate)
    1/3 block of Parmesan cheese


Preheat oven to 350F. Slice Zucchini in half, and then cut in half width wise, and carve them out with a spoon. Chop the zucchini "meat" and set it aside. Line zucchini boats on a baking sheet lined with parchment paper or arrange in a baking dish. Brown ground beef in a pan along with mushrooms, zucchini meat, and garlic added the last few minutes of cooking. Drain as much liquid as possible. Spread 1-2 Tbsp of sauce on each boat, then top with meat mixture. Sprinkle cheeses on top of meat mixture for each boat. Bake for 15-20 minutes or until cheese starts to brown and become crispy. Serve while warm
