Ingredients

2 bags boil in bag brown rice
2 slices bacon cut into small pieces (raw)
*for better health, use turkey bacon
1 Tbs vegetable oil
1 tsp garlic powder
1 tsp adobo seasoning
1 medium bell pepper diced small
3 Tbs sofrito sauce
1 package sazon con azafran
2 (16 oz each) cans kidney beans or pink beans, mostly drained. Only a small amount of liquid is needed to bring sauce together.
Tips
You can make additions to this such as serving it as a side dish with pork chops cooked in a little sofrito sauce and adobo seasoning for an authentic Puerto Rican dish. You can add onions along with the bell peppers. You can use salt pork or Canadian bacon instead of bacon or turkey bacon.
Directions
Boil rice according to instructions. Drain very well. Set aside. Add oil and heat on med/low. When hot, Add bell pepper and cook about 2 minutes. Add bacon pieces. Once it starts to really sizzle, add garlic powder and adobo seasoning. Stir well and then add sofrito and sazon con azafran packet. Stir well. Add beans and stir. When all is well heated, serve over Rice.
