Ingredients
-
Quaker Oats, Quick Oats, 1 lb.
Walnuts, 1 cup, chopped
Almonds, 1 cup, whole
Pecans, 1 cup, chopped
Cinnamon, ground, 2 tsp
Cardamom, ground, .5 tsp
ground mace, .5 tsp
Brown Sugar, 1 cup, packed
Butter, unsalted, .5 cup
Water, tap, 1/3 cup
Salt 0.50 tsp
Vanilla Extract, 2 tsp
Craisins, 2 cup
Tips
Can eat on yogurt or add to cereal or just eat plain
Directions
Preheat oven to 300, In food processor, grind half the oats to a fine powder. In a large bowl, combine the whole oats, ground oats, nuts, seeds and spices.
In a microwave-safe bowl (or saucepan over medium heat), combine the brown sugar, butter and water. Heat just until the butter has melted and the mixture is bubbly. Stir the mixture together until smooth, then stir in the salt and vanilla. Pour this mixture over the oats and nuts, stirring well to coat (I usually do this with my hands). It should be uniformly moist + stir in another tablespoon or two of water if it isn't. Let stand for about 10 minutes.
Separate into balls allowing space between them for the hot air to circulate. Place in the middle of the oven and bake for 30 minutes, or until golden brown.
Remove from oven and gently bread up into smaller clumps. Return to oven and bake another 15 minutes. Repeat bake and stir until the mixture is uniformly golden brown and completely dry. (Usually take 1-1 1/2 hrs) Cool completely and stir in craisins (Or whatever dried fruit you like)
Store in covered container at room temperature. Can be frozen.
Serving Size: 40-1oz. servings (this is estimated as I did not yet figure out the final tally of servings)
