    1 tablespoon olive oil
    1/2 medium onion, sliced thin
    2-3 yellow crookneck squash, sliced thin
    1 10-oz. bag frozen broccoli florets, cooked
    salt and black pepper


This is also good with Parmesan cheese sprinkled over the top, but those nutrition facts are not factored in.


Heat oil over medium-high heat. When hot, add onions. Stir occasionally until onions begin to caramelize. Add squash, stir, and cover tightly. Reduce heat to medium-low. While squash is cooking, prepare broccoli. Do not overcook. When broccoli is done and squash are tender, add broccoli to the squash mixture. Sprinkle salt and pepper to taste. Stir gently and serve immediately.
