Ingredients

    Spring roll wrappers, 16
    Chicken breast, 1#
    Peanut sauce, 1/2 cup
    Cellophane noodles, 4 dry blocks
    Coleslaw mix, 4 cups
    Fresh cilantro, 1 cup
    Red bell pepper, 1
    Green onion, 6
    Spring roll sauce, 1 cup
    Chopped peanuts, 1/2 cup

Directions

Cook and shred chicken breast, add peanut sauce, cool. Prep: boil noodles 2 minutes, chop cilantro and onion and add to slaw, cut pepper in thin strips. Mix spring roll sauce with rice vinegar and chili garlic sauce if preferred. Soften wrap in hot water, add chicken, noodles, slaw, pepper in line in center, roll up, cut in half at a diagonal. Serve with sauce and chopped peanuts.

Serving Size: Makes 16 spring rolls.
