Introduction

This is my protein breakfast, usually for when I'm using weights. This is my protein breakfast, usually for when I'm using weights.
Number of Servings: 4

Ingredients

    4 beaten eggs (large)
    1/8 cup sharp cheddar cheese (kroger brand)
    1 medium tomato
    dash of salt
    dash of pepper

Tips

Salsa is a great topping or replacement for the tomatoes. Add some onion and mushrooms or serve on toast for a heartier breakfast.


Directions

Chop tomato into smallish pieces. Mix in with beaten eggs and pour into non-stick pan at medium heat. Season with a pinch of salt and a pinch of pepper. Cook till eggs are satisfactory and turn off burner. Sprinkle cheese on top and let melt. serve.
