    3# boneless skinless chicken breast
    1 1/2 c. Crisco oil
    1 6oz. can of tomato paste
    1 10oz can of rotel tomatoes
    1 16oz. diced tomatoes
    1 c. chopped onion
    1/2 c chopped celery
    1/2 c. chopped green bell pepper
    1/2 cc. chopped green onion tops
    1/2 c. chopped parsley
    2 large garlic cloves shopped fine
    3 1/2 c. water
    2 T. sugar
    1 T. red pepper
    1 t. black pepper
    3 T. salt
    1/2 t. oregano
    2 T. Worcestershire sauce


Heat 1/4 c oil in a heavy skillet. When hot add flour and cook to a caramel color. In a 5qt. pot add 3T. oil and tomato paste ad cook on low until brown. sauté onion, bell pepper, celery and garlic. Add roux, rotel and tomatoes and continue to stir so it doesn't stick to the bottom of the pot. Slowly add water stirring until well blended. Add all seasonings. sugar and Worcestershire. Cook over med heat about 1 hour stirring about every 15 min. turn heat down and add green onions and parsley. Wash roux pot and heat remaining oil and brown the seasoned chicken. Drain on paper towel and add to piquant mixture. Cook 45-60 minutes. Server over hot rice.
