    2 c. sugar
    1/2 t. salt
    1/2 c. butter (unsalted)
    3/4 c. light corn syrup
    2 c. half and half split


Put sugar, butter, salt, corn syrup and one cup of cream in a large frying pan and heat over medium heat stirring occasionally to a boil. Add the other cup of cream slowly and stirring constantly. Cook, stirring constantly, to a soft to medium ball depending how you like them. This takes about 45 minutes.

Serving Size: makes 100 small caramels, best wrapped in waxed paper.
