    2-3 zucchinis, julienned
    16 oz can mushrooms (or the equivalent fresh)
    1 1/2 Tablespoons Butter
    1/3 Cup Cream
    1/2 Cup Parmesan
    salt and pepper to taste


You can add beef, chicken, turkey, ham or shrimp, just about any meat to make this a meal.


1. Cut the zucchinis into long ribbons with a vegetable peeler, or slice them into matchsticks with a julienne cutter, or shred on mandolin into small "noodles". Shred from the outside, turning to avoid the seeds. Discard the seeds, sprinkle with salt & place in a colander to drain.

2. Cook the mushrooms down, making sure all of the water is evaporated.

3. Add Butter, Cream, and Parmesan

4. Simmer to thicken. Add salt and pepper.

5. Stir in Zucchini last because it doesn't need to cook very long.

6. Simmer until thick.
