    4 pork chops (I've used boneless or bone-in), marinated in lemon garlic marinade
    3 c chicken broth or stock
    3/4 c sugar free apricot preserves
    1 T dijon mustard
    2 c. uncooked rice (I use white, but you can use brown)


Add brocolli! But be sure to marinade or season the pork and sear it first!


Marinade pork and brown in skillet, in batches if necessary. Remove to platter.

Add chicken broth, apricot preserves, and mustard. whisk and bring to a boil. Reduce heat to low, and add rice.

Return pork to skillet, cover, and simmer 25 minutes or until pork is cooked and rice is tender
