    1/2 lb of lean ground turkey (can substitute any ground meat)
    2 tsp taco seasoning
    brown and add seasoning
    add to frying pan:
    1 can corn
    1 can sliced olives
    1 can tomato paste
    1 can tomato sauce
    1 can stewed or diced tomatoes
    1 can black beans (drained)

    shred 1 cup of cheddar or Colby jack cheese

    Layer in 9 x 9 pan as follows:
    1st put enough sauce to coat bottom of pan to prevent sticking. then place tortillas on bottom breaking them as necessary (takes about 2 1/2 per layer) to cover pan. spoon 1/4 of the sauce then sprinkle 1/4 cheese. repeat until pan is full.


Cover with foil and bake for
20-30 minutes at 350 degrees.
One serving is 1/9 of the pan.
my kids love it and it has lots of healthy ingredients and its easy to make!
