Ingredients

1 C uncooked lentils. I've used black ones and regular ones
1TBS oil
I large onion chopped
I medium carrot chopped
I clove garlic minced
I can diced tomatoes
1.5 TBS maple syrup or brown sugar
1.5 TBS vinegar
veggie stock or water and magi cube
Whatever spices you like in your sloppy joes. I use a mix of cumin, smoked paprika, hot paprika, and chili powder.
Tips
This is good on baked potatoes.
Directions
pick over lentils, rinse them and put them in a pot of water over medium heat. When they come to a boil turn them down, put the lid on and let them simmer for about 20 minutes.
While the lentils are cooking, put the oil in a pan, heat and add the onions, cooking until soft, then add the carrots.
Add the garlic and whatever spices you want and stir for a minute, then add the can of tomatoes and the maple syrup. Heat through.
Drain and add the lentils and enough stock to cover everything. Put on the lid and cook for another 20 minutes or so. Test to see if lentils are soft.
When lentils are soft, remove lid and cook down until most of the liquid has evaporated.
