Ingredients

6 eggs, slightly beaten
salt and pepper to taste
1 cup diced cooked ham
3/4 cup chopped red sweet pepper
1 onion chopped
1 tbsp olive oil
1 tbsp fresh parsley (if you don't have fresh parsley, dried parsley is just fine)
1/2 cup cheddar cheese grated
Directions
Start off by combining the eggs, salt, and pepper in a big bowl and mix well. Add the cheese and mix well. Set aside.
In a oven proof skillet add the olive oil and cook the onion, red pepper and ham over medium heat until ham is lightly browned and the onion and pepper are tender. Add in the parsley.
Pour the egg mixture of the ham mixture in the skillet and cook on medium heat. As the egg mixture sets, using a spatula, run it around the edge of the skillet, lifting the egg so that the uncooked portion can flow underneath. Repeat this until the egg is almost cooked.
Place the skillet under the broiler about 6 inches from the heat and broil for a couple minutes until the top is nice and golden brown.
