    1 pound extra lean ground beef
    400 grams multigrain cereal (or oatmeal)
    2 large eggs
    your choice spices and seasoning, including 1 tbsp worchestershire sauce
    1 can diced tomatoes, any variety
    2 cups sliced mushrooms
    4 oz cabot 75% light cheese


Drain tomatoes.
Saute 2 cups mushroom slices in 2 TBSP diced tomato liquid.
Mix ground beef, cereal, spices, eggs and remaining liquid from tomatoes in a large bowl, mix well with hands.
Move about 3/4 of meat mixture to standard loaf pan, at least one inch thick on bottom, running mixture up sides and ends of pan.
Put mushrooms in the well created, layer cheese on top.
Place remaining meat mixture on top, sealing edges.
Pour drained tomatoes on top.
Bake at 350 for 1 hour. Let rest for 10 minutes.
(Note: this can be stuffed and topped with all kinds of low fat ingredients, sauteed bell peppers, eggplant, etc and you can vary the flavors by using southwest spices, italian spices, etc. You get the idea, be creative.) The tomatoes are optional as well, you could grate a little parmesan on top.
