    1 lb. ground beef, lean
    2 eggs, beaten
    1/2 cup gluten free bread crumbs
    1/4 cup prepared olive tapenade
    1/2 tomato, chopped, for serving


Preheat oven to 350 degrees. Mix ground beef, eggs, bread crumbs, olive tapenade, salt & pepper in a large bowl. Mix thoroughly with hands. Transfer mixture to a loaf pan that allows fat to drain. Bake for 40-60 minutes until thermometer inserted in the center reads 160 degrees. Allow to sit for 10 minutes before serving; top with tomato chunks.

Serving Size: Makes 4 servings
