    1/2 small head of Cauliflower, trimmed
    1 egg
    1/4 cup mozzarella and Parmesan cheeses
    1 tsp dried oregano or Italian seasoning
    Salt & pepper to taste
    1 tsp olive oil
    1 avocado
    sour cream


Preheat oven to 350. Place cauliflower in bowl of food process and pulse until finely chopped. Add egg, cheese, oregano, salt & pepper, pulse to combine. Line a baking sheet with parchment paper; use olive oil to grease. Place spoonfuls of the cauliflower mixture on sheet and spread out into circles, around 1 cm in height; make 4 circles. Bake for 40 minutes until slightly dried out, browning and firm to touch. Remove from oven and using a spatula, carefully peel away from parchment and flip. Return to oven for 10 additional minutes. Top with avocado and some sour cream; serve immediately.
