Introduction

Number of Servings: 12

Ingredients

    1 LB ground turkey
    1 T. olive oil
    1/2 white onion
    2 cloves garlic
    3 cans cannellini beans (low sodium)
    2 cans diced tomatoes
    28 ounces or 2 cans of low-sodium chicken broth
    1-2 Tsp each rosemary, basil, oregano
    2 cups fresh spinach

Tips

You can also throw this together without the spinach and simmer in crock pot for 5 hours on low, adding spinach the last hour.


Directions

Saute onions and garlic in olive oil. Add turkey and break up into small pieces. When no longer pink, drain and throw into crock pot. Add beans, tomatoes, broth, seasonings and black pepper. Stir. Add 2 cups of spinach on top and simmer in crock pot on high for 2 hours, stirring once or twice to mix in spinach.
