Ingredients

-2 Chicken Breasts
-1/2 cup Thai Green Curry Simmer Sauce (Trader Joes)
-3/4 cup Fat Free Mayo
-4 tbsp Yellow Mustard
-1/2 cup Green Onions
-1/2 cup Red Onion
-2 Large Pickles
-3 Hard Boiled Egg Whites
-Pepper to taste
Tips
-Don't overcook the simmer sauce with the chicken. It just needs to be heated, I like to let the chicken sit in the simmer sauce in the fridge a while before adding it to the mixture.
Directions
-Cook frozen chicken breasts in a skillet and then slice into small chunks. Then add the simmer sauce and cook until the sauce and chicken are equally hot.
-Prep the veggies while cooking the chicken. Slice the onions, pickles and egg whites into small chunks and throw together into Tupperware.
-Add the mayo and mustard to the veggie/egg mixture and stir. Add the pepper as well.
-Throw the chicken into the mixture and toss.
-Refrigerate until thoroughly cold.
