    3 Tbsp Almond Flour
    2 Tbsp Flaxseed Meal
    1/4 tsp. Cinnamon
    1/2 tsp Baking Powder
    Pinch of salt
    1 package Splenda or Stevia
    1 tsp coconut oil
    1 large egg
    12 raisins
    1/4 cup hot water


Soak raisins in hot water for 45 minutes to plump. In a small mixing bowl, sift almond flour, flaxseed meal, cinnamon, baking powder, salt and sweetner. Drain raisins, reserving water. Cut raisins in half and add to bowl with flour mixture. In another bowl, wisk reserved raisin water and egg together. Mix well with flour mixture. Swirl coconut oil around a 4" ramekin to coat and add remainder to batter and mix again. Pour batter into ramekin and microwave on high for two minutes. Remove from microwave and invert on cooling rack. Cool, slice in half. Toast and serve with butter.
