    1 pkg. ground meatless crumble
    1/2 yellow onion, diced (1 cup)
    1/2 cup shredded Cheddar cheese, low fat
    2 Tbsp. chili powder
    1/4 tsp. garlic powder
    1/4 tsp. salt
    1 tsp. ground cumin
    1 cup mild salsa, plus additional for serving
    1 cup corn kernels, fresh, frozen or canned
    1 can red kidney beans, drained
    1 cup frozen chopped spinach, thawed and pressed to remove excess liquid

    cornbread topping:
    1 cup flour
    3/4 cup cornmeal
    1/2 tsp salt
    2 TBS Baking powder
    1/4 cup sugar
    1 egg
    1/4 cup oil
    1 cup milk


For additional "kick", stir one can of diced green chiles into the cornbread batter.


Preheat the oven to 350 degrees.

In a nonstick skillet, cook veggie burger crumbles and onions over medium heat, stirring occasionally until the onions are translucent, about 5 minutes.

Stir in the chili powder, garlic powder, salt, salsa, corn, kidney beans, and spinach, and cook for 1 2 more minutes, until heated through.

Transfer the mixture to an 8-inch square baking dish, and smooth it down.

In medium bowl, combine flour, cornmeal, salt, baking powder, and sugar. Stir in egg, oil and milk until well mixed. Pour over top of casserole.

Bake it, uncovered, for about 30 minutes or until the top is golden brown. Serve it with additional salsa, if desired.
