    1 Tbsp light olive oil
    3 cups rice, day old
    0.4 block extra-firm tofu, diced
    1/2 cup diced cooked chicken breast
    3/4 cup frozen mixed veggies
    2 scallions, minced
    1 tsp ginger, grated
    1 tsp sesame oil
    1 Tbsp lite soy sauce
    1 tsp rice wine vinegar


heat oil in wok or pan
add diced tofu, stir fry until lightly growned; remove from pan
add scallions and ginger, saute briefly
add chicken
add mixed veggies (I sometimes include snow peas, napa cabbage, shoestring carrots, etcetera)
add soy sauce and vinegar; turn up heat
add rice and tofu and stir-fry until heated through
drizzle with sesame oil
