Ingredients

    9 oz Chicken Italian Sausage
    100% Extra Virgin Olive Oil Cooking Spray
    1 medium pepper red sweet pepper
    1 medium yellow sweet pepper(remove)
    1 large Green Bell Pepper
    1/2 medium onion, raw
    3 cloves Garlic
    1 tbsp. Coconut Oil,
    1/2 cup Heated Chicken Stock / Broth (1 Cup), .5 cup
    16 cherry tomatoes

Tips

Serve over brown rice for a complete meal,


Directions

Spray large skillet with EVOO and add sausage to skillet. Brown. Remove meat from pan and set aside.
Melt coconut oil in skillet. Add diced peppers and onions, sauté for 5 minutes. Add minced garlic and tomatoes to other veggies. Add stock and meat. Simmer on medium heat for 20 minutes.
