Ingredients

    8 Medium Potatoes - Peeled and cubed
    1 cup non fat evaporated milk
    1/2 cup low fat sour cream
    1 tsp salt
    1/2 tsp ground pepper
    2 cups fat free cheddar cheese
    6 slices cooked and crumbled turkey bacon
    1 cup chopped green onion


Tips

I also add Mrs. dash garlic to potatoes before mixing. and have used scallions instead of onions.


Directions

peel , cube and boil potatoes until soft. strain place back into pan. add evaporated milk, 1/2 the cheese, sour cream salt and pepper . Whip until smooth with a hand mixer. Add in bacon and onion. hand mix until well blended. Place in a 13x 9 pan bake in oven on 2350 for 20 mins. remove top off with remaineding cheese put into oven about 3 mins or until cheese is melted. Serve hot.
