Ingredients

    1-1/3 c. chicken broth
    2/3 c. barley
    1 t. olive oil
    1/2 c. thinly sliced carrots
    1/2 c. thinly sliced celery
    1 clove minced garlic
    1/2 c. sliced mushrooms
    1/4 c. sliced green onions
    1-2 T. soy sauce


Directions

In a med. saucepan, bring broth to a boil. Stir in barley. Reduce heat. Cover and simmer 10-12 min or until tender. In large skillet heat oil. Cook carrots, celery and garlic over med-high heat 2-3 min. Add mushrooms and green onions and cont. cooking 1 min. Add cooked barley and soy sauce. Continue cooking over med. heat until heated through.

** could substitute brown rice if desired
