Ingredients

1 large turkey breast, roughly 5-7 pounds
1 large onion, diced large
4 large carrots, diced large OR 15 baby carrots, whole
4 celery stalks, diced large
1 tsp salt
1 tsp pepper
2 tsp Italian seasoning (no added sodium)
1 cup cranberries, whole, rinsed
1 lemon sliced thin
1 cup water
Tips
Quinoa could be added to the liquid at the end and cooked on HIGH for about an hour then served with the turkey, this isn't included in the nutritional counts.
Directions
Prepare the turkey breast by removing anything inside cavity and removing as much skin as possible. Then cut the breasts off the bone. If skinless, boneless, all the better!
Spray crockpot w/ cooking spray, add onions, carrots and celery to bottom and sit turkey breasts on top. Sprinkle w/ salt, pepper and Italian seasoning. Add cranberries and place lemons on top of breasts. Add water, making sure not to wash off seasoning.
Cook on HIGH for 4 hours or LOW or 8 hours until breast is fork tender. Turn off a let rest before serving, then enjoy!
