Ingredients

    3 cups oats
    2 large eggs
    1/4 cup vegetable oil
    1 cup milk (I used Silk)
    1/4 cup brown sugar
    1/2 cup applesauce (I mashed up a gala apple because I didn't have any sauce on hand)
    1 tsp cinnamon
    1 tsp baking powder
    2 tsp vanilla extract

Tips

You could easily add mashed banana, dried cranberries, raisins, nuts, or whatever you like.


Directions

Combine oil, sugar, eggs, applesauce, cinnamon, and vanilla in a large bowl.

Add the rolled oats, baking powder, and milk and mix thoroughly.

Pour into 8 or 9 inch baking dish and bake for 20 minutes. Let sit for 5 minutes, cut into squares, and serve warm.
