Ingredients

    15 oz can reduced sodium black beans, rinsed & drained
    1/2 cup tomato, chopped
    1/2 cup cucumber (or celery) chopped
    1/2 cup bell pepper, chopped
    1/4 cup avocado, peeled & cubed
    1 tablespoon lemon juice (fresh is best)
    1 clove garlic, minced (or 1/4 t garlic powder)
    1/8 teaspoon salt
    freshly ground pepper to taste

Tips

You can add 1/2 teaspoon of a variety of spices to change up the flavor. Try cumin, Italian seasonings or curry powder.


Directions

1. PLACE all the ingredients in a large bowl.


2.STIR to combine.
