Ingredients

    1 sheet Nori Seaweed
    1/2 c cooked long grain Brown Rice
    1 Tbsp grated carrot
    1 Tbsp green Onions, chopped
    1 Tbsp chopped red bell peppers
    1/2 c pureed avocados

Directions

Cook the brown rice & set aside. Take one Nori sheet; spread with pureed avocado, spread brown rice on top; sprinkle onions, carrot & peppers evenly. Using a bamboo sushi mat roll fairly tightly. Chill & slice into pieces. Delicious with pickled ginger & wasabi horseradish.

    This is a good recipe since we're not aloud to have crabs, and shrimp in the house(my mothers alergic..)And even with salmon or imitation crab we have to be VERY CAREFUL.But truthfully?The veggy part of the roll is my fav, with the rice and nori of course - 11/21/09
