    1 lb. boneless, skinless chicken breast, in 1/2 in. cubes
    1 TB canola oil
    7 - 8 medium tomatillos, quartered
    1 Jalapeno - seeded
    1 onion chopped (1.25 cups)
    3 cloves garlic, minced
    2 4 oz. cans diced green chilis
    4 cups water
    2 TB Better Than Boullion - low sodium chicken
    2 tsp. ground cumin
    1 tsp. ground coriander
    1TB corn Starch
    1/2 cup chopped cilantro
    1 tsp. salt


1. in stock pot, cook chicken and onion in canola oil, add garlic.

2. In blender puree, tomatillos and jalapeno. Add to chicken mixture. Add green chilis, water, boullion, cumin, and coriander. Bring to a boil. Simmer 45 minutes, uncovered.

3. If you want to thicken, add corn starch mixed in 1/4 cup water.

4. Stir in chopped cilantro and salt.

5. You may serve with any toppings you like: tortilla chips, shredded cheese, sour cream, etc. (not included in nutrition info)
