    1 c dry lentils
    3 c. water
    1 c. coarse chopped mushrooms
    1 c. frozen peas
    1 c. shredded carrots
    1 c. celery (I used tops)
    1 c. fresh corn off the cob
    1 c. onion
    1 large Tbsp. Beef Better than Bullion (or just use any bullion to taste)



Start the lentils cooking by adding them to the water. Add the beef bouillon.
While the lentils are cooking, chop your veges. You can actually use any vegetable you happen to have to hand in 1-cup servings of each and still have a fantastic dish when you're done.
The lentils will take about 30-40 minutes to cook. If you want it in a shorter period of time, use red, orange, or yellow lentils which cook faster.
Once the lentils are tender, add in the veges all at once and cook another 10 minutes or so until they're just tender.
