Number of Servings: 6


    1 3/4 cup flour
    1/4 cup sugar
    2 1/2 teaspoon baking powder
    3/4 teaspoon salt
    1 egg
    3/4 cup skim milk
    1/3 cup olive oil
    1 cup cranberries, coarsely chopped


You want lumpy batter or muffins will be very dense.


In a large bowl stir together the flour, sugar, baking powder and salt. Make a well in the center. Combine egg, milk, oil and cranberries. Stir and fold in until just moistened. Batter will be LUMPY. Grease muffin cups or like with paper bake cups; fill 2/3 full. Bake in a 375 degree oven for 25-30 minutes or till golden.

Serving Size: Makes 6 large muffns or 12 regular size muffins. Nutrition is for 6 muffins.
