Directions

preheat oven to 350
saute peppers and onions
mix half of enchilada sauce and 2/3 of cheese with all other ingredients except tortillas
add in peppers and onions to mixture
line dish with 3 corn tortillas
add mixture on top, pour half of remaining enchilada sauce on top
cover with remaining tortillas
add rest of enchilada sauce and cheese on top
cover with tin foil
bake at 350 for 20-25 minutes, the last ten minutes cook uncovered
