Tuna noodle casserole gets an upgrade by swapping in fresh asparagus and canned salmon. Tuna noodle casserole gets an upgrade by swapping in fresh asparagus and canned salmon.
Number of Servings: 6


    2 (6-ounce) cans salmon, packed in water
    8 ounces no yolk egg noodles
    1 can low-fat cream of mushroom soup
    1/2 cup skim milk
    1 t dried thyme
    3 cups fresh asparagus, cut into 1" pieces
    1 1/2 cups shredded sharp cheddar cheese


Preheat oven to 350 degrees F.
Boil noodles until done, then set aside. In a large bowl, combine the drained salmon, soup, milk, thyme, asparagus, and noodles. Pour into a greased 8 1/2 x 11 casserole dish.
Bake for 20 minutes.
After 20 minutes, sprinkle cheddar cheese on top and bake another 10 minutes.

Makes 6 (1 cup) servings.

    Very good, even my husband had seconds. Added a few onion flake and some Cajun seasoning for a little kick, otherwise followed the recipe. Will make again. - 4/28/15

  • Interesting idea would use noodles with whole egg to keep it healthy & use mushrooms & broth so to avoid the canned junk. - 5/15/19
