    2 large eggs
    1 tbs 1/2 and 1/2
    *Bell Pepper Strips, Frozen, Trader Joe's, 1 serving
    *Onion - Yellow 1/4 cup
    *Sundried Tomato Basil Chicken Sausage- 1 link
    *Extra Virgin Olive Oil, .5 tbsp
    *Trader Joe's Shredded Swiss & Gruyere Cheese Blend (1/4 cup / 28g)
    Chili chipotle powder
    Salt and pepper


Saute frozen bell peppers. When thawed, add olive oil and onion. Chop chicken sausage up and add to skillet. Saute for about five minutes.

In the mean time, beat two eggs and half and half. Add salt and pepper. Add mixture to pan and let settle. Push back to let eggs run. When set, add cheese and flip omelet over. Sprinkle with chili chipotle powder.
