Introduction

Ingredients

    Soup
    1 cup broccoli florets chopped
    1 carrot grated
    1 clove garlic minced
    3 slices of onion chopped
    3 cups vegetable broth

    Roux
    3 Tbl margarine
    3 Tbl flour

    1/2 cup no fat milk

Tips

Shredded cheese can be put on top when serving, add those calories into the total.


Directions

In medium sized pan put the broth, add broccoli. carrot, onions and garlic. Simmer for about 15 til While that is cooking make the roux in a small fry pan. Melt the margarine, add flour stir continuously until light brown. When the soup is done, add the roux, stir until well mixed then add the milk. Do not overcook or boil.
