    2 lbs fresh or thawed shrimp, peeled & deveined
    3 tbl trans-fat-free margarine
    4 garlic cloves, minced
    1/4 c fresh lemon juice
    3 tbl chopped fresh parsley
    1/8 tsp red pepper flakes
    salt & ground pepper


Rinse shrimp under cold water and pat dry well w/ paper towel. Season w/ salt and pepper.

Heat margarine and garlic in large skillet over medium heat until melting and bubbling, 1-2 minutes. Add shrimp and stir to coat w/ margarine.

Add lemon juice, parsley, and red pepper flakes; cook, stirring occasionally until shrimp are pink, about 2 minutes; do not overcook (or shrimp will be tough). Remove from heat, season with salt and pepper and serve hot over brown rice or whole wheat pasta.
