Number of Servings: 4

Ingredients

    4 chicken thighs - seasoned to taste as for roasting
    1 large potato, sliced
    2 carrots, pared and sliced
    1/2 cup mushrooms, quartered
    2 stalks of celery, chopped
    1 large onion, sliced
    1 12 oz can of beer
    to taste: garlic cloves, pepper

Tips

You can use chicken breasts and a wider variety of vegetables to taste. I serve this over brown rice with a fruit for dessert for a complete meal.


Directions

Place hard vegetables in the crockpot first. Layer onions and garlic, if used, on top. Pour one can of beer over the vegetables. Season chicken thighs as if to roast - I like Johnny's. Place on top. Cover and cook on low for 6-8 hours.
