Introduction

Ingredients

    pasta (your fave), spinach, olives, roasted red peppers, basil, EVOO, italian sausage, S/P, crushed red pepper flake.

Directions

Boil pasta according to directions (I like Cavatappi). Cook spicy italian sausage in pan, break links out of casing to brown meat. Drain fat. Add pasta and sausage back into pasta pot. Add 2 tbsp EVOO, 2 cups spinach (de-stemmed), 1/4 basil chopped, 1/2 cup roasted red pepper cut into strips. Mix in 1 c. feta and gently mix until spinach wilts a little.

Serving Size: makes 8- 1c. servings
