    onion, 1 large chopped
    garlic, 4 cloves sliced
    olive oil
    Swiss chard, 3 big handfuls of leaves, chopped = about 8 cups
    red wine or apple cider vinegar
    grated parmesan cheese
    eggs, 8
    a splash of lactose-free skim milk
    Italian seasoning


Preheat broiler.
Saute onion in butter/olive oil over medium-low flame until soft.
Add the garlic and saute for another minute until fragrant.
Add the chard in piles. Mix with onion/garlic mixture. Cover and allow to wilt. Add more chard and repeat until it is all incorporated.
Add vinegar, salt, pepper, crushed red pepper, and Italian seasoning. Mix well.
Meanwhile, buzz 8 eggs with a splash of milk in the blender. Add to skillet ( I use cast iron. ). Lower the flame and allow the eggs to set for several minutes.
When the egg is mostly set, place the skillet under the broiler for a few minutes until nicely browned. Pull it out and check the center for liquid egg. If there isn't any, top with parmesan and stick it back under the broiler until the cheese is browned.
Allow the finished frittata to sit for a few minutes, then cut and serve.

Serving Size: makes 1 10-inch skillet = 4 big servings
