1.5 TBSP Lemon Juice
1 tsp grated lemon rind, divided
6 TBSP Chutney, Mango
.66 dry Near East Long Grain & Wild Rice
.33 diagonally curt green onions
.5 tsp salt, divided
.25 tsp pepper, divided
1 lb Pork tenderloin
Directions
1. Preheat oven to 400 deg.
2. Combine 1/2 tsp rind, 1 TBSP juice, and chutney in bowl.
3. Cook rice according t package directions omitting salt and fat. Stir in 2 TBSP chutney mixture, remaining 1.5 tsp juice, remaining salt, and 1/8 tsp pepper. Sprinkle pork with remaining salt and pepper.
4. Heat a large ovenproof skillet over med-high heat. Coat pan with cooking spray. Add pork; cook 4 mins, browning on all sides. Place in oven; or until thermometer registers 155 deg.
5Spoon remaining 1/4 cup chutney mixture over pork. Cover loosely with foil; let stand 5 mins or until temperature reaches 160 deg (slightly pink. Cut porj into thin slices. Serve with rice.
