Low fat turkey vegetable lasagna light on cheese. Low fat turkey vegetable lasagna light on cheese.

    1 can Hunt's Chunky vegetable pasta sauce
    8 oz ground turkey
    4 Tbsp shredded Parmesan cheese divided in half
    3 cups zucchini
    4 cups fresh spinach
    1 cup red bell pepper
    1 tsp Mrs Dash tomato basil seasoning


Add low fat cottage cheese or ricotta as desired but calories not calculated.


Preheat oven to 350
1. Brown ground turkey
2. Add red pepper
3. Add spinach when red pepper softened and cook until wilted
4. Spray pan with nonstick spray
5. Layer pasta sauce on bottom of pan
6. Slice zucchini longitudinally (like thin noodles) and layer on bottom of pan.
7. Layer 2 Tbsp Parmesan cheese over zucchini
8. Layer turkey vegetable mixture over zucchini.
9. Repeat layers of pasta sauce followed by zucchini and then pasta sauce and top with 2 Tbsp Parmesan cheese. Sprinkle Mrs dash tomato basil to taste or add your own Italian seasonings.

Bake in oven for 45 min or until top layer of zucchini cooked through
