    Dry Ingredients:
    2 cups Kellogs All-Bran cereal
    1.25 cups flour
    .5 cup sugar
    2 tsp. baking powder
    2 tsp. cinnamon
    1/4 tsp salt
    Wet Ingredients:
    1/4 cup canola oil
    1 whole egg
    1.5 cup nonfat milk
    1 tsp vanilla extract (real stuff)
    2 tbs. molasses


After cooling...keep in a sealed plastic container in the fridge. I have one for breakfast, my husband has two. I make them every four days.


Set oven to 350 degrees while you prepare the recipe.
Measure wet ingredients in a bowl. Pour over the bran cereal. Let it sit while you mix the dry ingredients.
Measure all dry ingredients....stir with fork/whisk until well mixed. If your bran mixture has softened (stir a few times) AND oven has hit 350 degrees.... pour wet ingredients into dry ingredients. Mix JUST until blended...don't over mix. Divide equally into Pam sprayed muffin tins. Bake for exactly 20 minutes. Makes 12 muffins.
